14 graham crackers (1.5 cups crushed)
1/3 cup butter
2 Tbps sugar
4 eggs
1 cup sugar
2 tsp vanilla
3 (8 oz) pkg cream cheese
Name-brand cream cheese usually blends smoother.
Melt butter
Combine crust ingredients, press into spring form pan.
Beat cream cheese, sugar, vanilla until smooth
Add eggs one at a time, mix just until blended
Pour filling into crumb crust
Bake 40 minutes in 350° oven
To help prevent cracking, try putting pan in a hot water bath (2/3 up pan max)
After baking, turn off oven, open door then let cheesecake sit for a while (1 hour?)
Cool in fridge covered with plastic wrap at least 5 hours before serving.
